
Chorizo bean stew

- Cooking oil spray
- 1 Large onion
- 70g Chorizo
- 1 Red chilli
- 1 each Large red and yellow pepper
- 1 tsp Smoked paprika
- 1 tsp Dried oregano
- 1/2 tsp Cayenne pepper
- 400g Tin mixed beans in water
- 400g Tin chopped tomatoes
- 1 tbsp Tomato puree
- 200ml Vegetable stock
- 2 tbsp Half-fat soured cream
Method
- 1Mist a pan with cooking spray. Fry the onion over a medium heat for 6-8 minutes, until soft. Season, then add the chorizo, chilli and peppers. Fry for 2-3 minutes until the chorizo has released its oil.
- 2Stir in the smoked paprika, oregano and cayenne pepper and fry for 1 minute. Add the beans, tomatoes, tomato puree and stock. Season, bring to the boil, then simmer for 20-25 minutes, or until thickened. Serve with the soured cream.
