Ingredients

  • Cooking oil spray
  • 1 Large onion
  • 70g Chorizo
  • 1 Red chilli
  • 1 each Large red and yellow pepper
  • 1 tsp Smoked paprika
  • 1 tsp Dried oregano
  • 1/2 tsp Cayenne pepper
  • 400g Tin mixed beans in water
  • 400g Tin chopped tomatoes
  • 1 tbsp Tomato puree
  • 200ml Vegetable stock
  • 2 tbsp Half-fat soured cream

Method

  1. 1Mist a pan with cooking spray. Fry the onion over a medium heat for 6-8 minutes, until soft. Season, then add the chorizo, chilli and peppers. Fry for 2-3 minutes until the chorizo has released its oil.
  2. 2Stir in the smoked paprika, oregano and cayenne pepper and fry for 1 minute. Add the beans, tomatoes, tomato puree and stock. Season, bring to the boil, then simmer for 20-25 minutes, or until thickened. Serve with the soured cream.
