Thai chicken satay skewers with herby noodle salad

Ingredients

  • ½ small bunch Fresh coriander
  • 1 Fresh red chilli
  • ½ Garlic clove
  • 3 heaped tbsp Good-quality crunchy peanut butter
  • Soy sauce
  • 2cm piece Fresh ginger
  • 2 Limes
  • 4 x 180g Skinless chicken breasts
  • Runny honey
  • 250g Dried medium egg noodles
  • 100g Unsalted cashews
  • ½ Medium red onion
  • 1 Fresh red chilli (for noodles)
  • 1 tsp Sesame oil
  • 1 tsp Fish sauce
  • 2 Little gem lettuces
  • Olive oil and extra virgin olive oil

Method

  1. 1Turn the grill on to full. Soak 4 wooden skewers in cold water. For the satay, put the coriander (stalks and all) into a food processor with the chilli, peeled garlic, 3 heaped tablespoons of peanut butter and a lug of soy sauce. Add the peeled and roughly chopped ginger, finely grate in the zest of both limes and squeeze in the juice of 1. Add a couple of splashes of water and whiz to a spoonable paste, season. Spoon half into a bowl for serving; keep the rest aside.
  2. 2Push skewers through the chicken breasts and slice between them to give 4 kebabs. Scoop the rest of the satay mix into a roasting tray, add the chicken skewers and toss to coat. Drizzle with olive oil and season with salt. Grill on the top shelf for about 8-10 minutes each side, turning and drizzling with a little runny honey, until golden and cooked through.
  3. 3Put the noodle nests in a large bowl, cover with boiling water and a plate, and leave to soak for 6 minutes. Toast the bashed cashews in a dry frying pan, tossing. Pulse the red onion, chilli and coriander stalks in the processor until finely chopped, then put into a large serving bowl with 1-2 tablespoons of soy sauce, a few lugs of extra virgin olive oil, the juice of 1 lime, and 1 teaspoon each of sesame oil and fish sauce.
  4. 4Drain the noodles, refresh under cold water, drain again and add to the bowl. Turn the heat under the cashews to high, add 1 teaspoon of honey and toss until dark golden, then tip into the bowl with the coriander leaves. Toss everything together.
  5. 5Serve the chicken skewers with the noodle salad, the bowl of satay sauce, little gem lettuce leaves, coriander, chilli and lime wedges, letting everyone build parcels.
