Paprika beef & butter bean goulash

Ingredients

  • 500g Lean beef braising steak
  • Cooking oil spray
  • 2 Onions
  • 2 Garlic cloves
  • 1/2 tbsp Smoked paprika
  • 400g Tin chopped tomatoes
  • 300ml Beef stock
  • 1 Red pepper
  • 1 Green pepper
  • 410g Tin butter beans

Method

  1. 1Preheat the oven to 150C, fan 130C, gas mark 2.
  2. 2Season the steak and mist a lidded flameproof casserole with cooking spray. Brown half the steak over a medium heat and transfer to a plate. Repeat with the rest of the beef.
  3. 3Mist the casserole again and cook the onions for 5 minutes, stirring to stop them sticking. Once softened, stir in the garlic and smoked paprika and cook for a further minute, then add the tomatoes and beef stock. Return the beef, season and bring to a simmer. Cover and transfer to the oven to cook for 1 hour.
  4. 4Remove from the oven and stir in the peppers and butter beans. Replace the lid and return to the oven for a further 30 minutes, or until the meat is meltingly tender and the vegetables have softened. Freezes well.
